Can a flying creature use Spring Attack while airborne? (Provided it can make the fly checks to turn around and such.)

And don't say that's what Flyby Attack is for. They are different feats. The point of Spring Attack is to avoid AoO's and creatures with reach. The point of Flyby Attack is to be able to take standard actions on the move.
