If you're looking for more... active... options, Greater Shadow Evocation is nice, or Summon Monster VIII.
IF you've got wands of Dimensional Anchor and Magic Circle vs. Whatever (or have them known, but I don't know a lot of Sorcerers with the Magic Circle vs. line) Greater Planar Binding can be amazing.
Or, well, Maze isn't bad for getting a break from an unpleasant foe...

Well, Polymorph Any Object can do battlefield control (e.g. via Transmute Rock to Mud, or just polymorphing an existing object into a wall or a cage around your enemy). But again, it's very GM-dependent.
It's also a buff (greater polymorph)!
And a save-or-die (flesh to stone)!
And a healing spell (stone to flesh, or turn a guy with one arm into a guy with two arms)!
And a summon spell (turn a boulder into a gold dragon)!
And a floor wax!
And a dessert topping!

Maze pairs so beautifully with a quickened Touch of Idiocy cast with a Rod of Maximize :)
The lovely thing about Maze is that you know *exactly* where your enemy is going to be standing in ten minutes (if you've debuffed his intelligence), so you can prepare a little welcoming party.
Greater planar binding is fantastic because of the access to SLAs 18 HD outsiders can give you (like wishes!), but I feel more comfortable casting that once I can just hit the called being with Dominate Monster, so I don't have to worry about paying it off and all the other shenanigans that spell involves. Once there, though, it's just immensely useful.
