Skeletons, Skeletal Champions, and other such templates with regards to Spells & SLAs

What happens to a creature's spell like abilities when it becomes a skeleton (or other similar monster)? Skeletons retain no special attacks, but the bestiaries list spells, SLAs, and special attacks seperately. Are spells and SLAs therefore retained, or are they dropped?

And does it make a difference if the creature becomes a skeletal champion? Does it retain its SLAs? What about spells? If a Nymph becomes a skeletal champion (a template which retains class levels) does she lose her natural ability to cast like a druid simply because she's not actually a druid?

These are the questions that have been running through my mind as of late.
