My players were contesting the poison rules last night. Could you give me a quick break down of the process and saving throw process to show them please?

Step 1: You get exposed to a poison (whether by drinking it, getting bitten by a spider, or whatever).
Step 2: You attempt your initial Fortitude save against the listed DC. If you're successful, the poison fails to affect you in any way whatsoever, no matter what the cure conditions are. If you fail, move to Step 3.
Step 3: Having failed your initial Fort save, you take the listed Effect (often ability score damage), and are poisoned. Move to Step 4.
Step 4: At the next Frequency interval, make another Fort save. If you fail, you take the listed effect again and must repeat Step 4 (at the next interval). If you succeed, you suffer no additional ill effects at this time, and might be cured (depending on the cure conditions listed in the poison's stat block).
Step 5: Once the poison is either cured or runs out of duration, the character is no longer poisoned.
