Rules for Templates

What are the rules on using a template for a PFS character? Let's say if someone wanted to use the Young template, would the rules condemn it? Probably a stupid question, I just didn't see anything about it anywhere in the Organized Play guide. Maybe I just didn't look hard enough?

There are no templates allowed on your PC, I'm afraid. (Or did you mean templates on animal companions?)

Regarding character age, you can set your PC's age as anything you like, but you get no mechanical benefit from it. So, be a 75-year-old human, but you don't get a boost to your mental attributes.

Actually I believe there is a FAQ answer indicating you have to be within the age range of a starting character per the Core Rule Book.

"One-upper" post ;) The only template allowed would be a curse or magical effect (ex. Mist-Tainted or Bestial), which is applied as part of a scenario. And these conditions clear at the end of the game one way or another.
