Looking through the books, I don't see any overall listing for various knowledge checks (Local, Nobility, etc). Since there seems to be a lot of downtime for the characters and a good back story to the setting, does anyone have a homebrew Knowledge chart they don't mind sharing (or is this something that is being added to the anniverary release)?

I don't follow what you're asking for. What do you mean by a
"Knowledge chart?"
The way I work it is pretty much on-the-fly: the PC asks a question, if it's covered by a Knowledge skill, I have them make a roll. I take a mental stab at how hard the question is, and consult the generic Knowledge skill chart to figure out the DC.

Something like the various difficulty to track down different information from the community. Gather Information, Rumors, etc. I know there are some entries in the various adventrures that ask for Knowledge Local or Knowledge nobility, but is there anyone that has put togather something for like the various rumors or other information.
I was looking for something to use as a good guide on how hard some of the local gossip and back story is to find out from the various villages.
Example:
DC 5 =
DC 10 = The sheriff and his brother on in some type of family fued.
DC XX = The trist between the main villian in book one that caused her to get pregnant.

I never made a table like that. In general, my group prefers to role-play the "gather info" and rumor mongering rather than roll for it against a table
I usually play this sort of thing by ear and let the info come out through conversations with NPCs, depending on the nature of the conversation, how much that NPC knows and/or speculates, attitude toward the PC, etc.
If the player flat-out asks me, "Have I heard anything about X?" then I'll roll a knowledge check based on the general guidelines in the Knowledge skill. But aside from that, the players have to role-play interactions with NPCs to draw out that kind of background info.
