How to Create a Stone Golem?

Specifically, I want to understand what spells are needed to capture the spirit of an earth elemental. My search powers have proven too weak.

A stone golem's body is chiseled from a single block of hard stone, such as granite, weighing at least 3,000 pounds. The stone must be of exceptional quality, and costs 5,000 gp.

Of course, that's not exactly what you were asking. There's nothing there about capturing the spirit of an earth elemental, although I'd imagine the limited wish part could do that.
