I wish to create templated undead, specifically Fast Brain Eating Zombie's. When my FBE Zombie kills an innocent peasant, will the peasant Rise as a Fast Brain-eating Zombie or just a Brain-zombie?
Brain-eating Zombie: These terrifying zombie variants
feed on humanoid brains. They gain a bite attack that deals
damage based on the zombie’s size, and the grab special
attack, usable against opponents of the zombie’s own size or
smaller. When an opponent dies, the zombie uses its next turn
to feast upon its victim’s brain, making spells that require a
complete corpse (such as raise dead) useless. Anyone killed after
being bitten by a brain-eating zombie rises as a brain-eating
zombie in 2d6 hours unless the corpse is blessed or similar
preventative measures are taken. (CR +0)

Also when referring to the general creation of Fast Zombie's do I have to cast haste/remove paralysis once during the casting of my undead creating spell, or once for each zombie to be animated?
Thirdly, the way I understand it I can create my own template's (with GM's permission), what would happen if I cast status?

The Fast Zombie template does not have the line about being raised as a fast zombie, so it would seem that your spawn do not, per the RAW, get to be Fast, Brain Eating Zombies. Just Brain Eaters.
It would certainly not be an unreasonable house rule and stretch of logic to allow this, however. I would suggest talking to your DM about it. If you ARE the DM, and you want this to happen, just do it. ;-)

Where in the text does it say Fast Zombies need that spell cast upon them? I don't see that at all in their section. Could you quote the text for me?

Whatever you and your GM want to happen, since that's homebrew.

Its not in the Fast Zombie section itself. Its in the zombie description text, below the stat block.
Although capable of following orders, zombies are more often unleashed into an area with no command other than to kill living creatures. As a result, zombies are often encountered in packs, wandering around places the living frequent, looking for victims. Most zombies are created using animate dead. Such zombies are always of the standard type, unless the creator also casts haste or remove paralysis to create fast zombies, or contagion to create plague zombies.

Whatever your GM says happens. But how about, the zombie would have a connection with all other zombies within X feet. Once any zombie within that area get damaged, the status zombie starts moving toward that location.
Basically, attacking one zombie in the area could draw all of the status zombies to your location.
