Wondering if anyone knows of any product Pathfinder or 3.0/3.5 that detailed damage to weapons and armor over time, such that if they were not repaired and taken care of, they would break.

well...I suppose that Ultimate combat had some rules regarding using Armor as DR, so you might want to start there.
Chapter 7 on CRB (Additional Rules) has stuff for damaging items, and it might also be of help
