So with the new class options in UM and UC what's the best combination for the highest "to hit" and damage output, plus any other factors you may want to bring up?

No such thing as arcane archer optimization :); if you must though, ranger 6 / wizard 1 is still as good as you get; improved precise etc. But still, Arcane Archers and all layover prestige classes are still really bad.

No, Fighter 1/Wizard5/Eldritch Knight 3/Arcane Archer 3/Eldritch Knight 2 is the way to go. Here is a sample build called Presto Flingo.

By the way. He is quite optimized.
