The Saurian Shaman must select a dinosaur if he selects an animal companion. Is this the dinosaur (velociraptor) from the CRB, or is any dinosaur with animal companion entry (such as stegosaurus, tyrannosaurus, etc.) available?

Any dinosaur with an animal companion entry should be acceptable. There is no reason to believe you'd be limited to those in the CRB.
