I think most of APs state in the beginning that they use the medium path. As a general rule of thumb everything uses the medium. The other two are optional.

I assume it's medium or fast. the guidelines for each path will tell you where your group should be level wise at the conclusion of each book.

I've decided to do so as well; it's a simpler method of ensuring the party will be at a given level when they need to be at that level to overcome the challenges they'll be facing. It also reduces a bit of bookkeeping.
