Whilst reading up on haunts, I found myself a little confused regarding "Spell Level". When it says the Caster Level, I get that its the level that the "caster" must be at to be able to cast that spell. So a Spell Level 3 (Cleric) spell would need a Cleric of level 5 to be able to cast it.
That's easy, but when there are multiple classes on a specific spell - lets say Animate dead where its Spell Level 3 for Cleric, and then Spell Level 4 for Mages, which do I use?
Please quote a page number of any rule book that this is covered in because I can't find it ANYWHERE!

I would say cleric, because the haunt manifests from spiritual energies, not arcane forces (it's more like an undead than a construct). I can see the possibility of particular haunts casting as sorcerers, witches, or as the class that the deceased had in life, though. Note that a different spell level could also modify the minimum ability score required to cast that spell.
Since the GMG, which introduced haunts, doesn't say, I doubt there is an explicit rule anywhere.

The issue also resides in the fact that it also applies to potions, scrolls and magic items. This is not the first time the question has been raised I'm sure. I asked Jason directly and this was the response:
Always default to cleric or wizard, whichever is lower.
Now he never stated what the source of this was from, so a source would be helpful or perhaps it should be added to the Errata. I've got just about all the books and I can't find anything anywhere.

In the example haunt in the GMG, Bleeding Walls is based on the Fear spell. This spell is listed as Bard 3, Sorcerer/Wizard 4. The DC is 16, which matches Wizard 4.
Looks like that is consistent with what Jason said.
