My character is a wizard in a campaign that is heavy on undead and and evil outsiders. I'm in 10th level just about to hit 11th. I was discussing with my dm if I could attempt to create my own spell that would be helpful against undead.
my first thought was a spell that would take away undeads immunity to critical hits. My party tanks crit quite a bit. Would this be a feasible spell. What level do you think this would fall into?

Undead are not immune to critical hits. If you are having a lot of trouble with, say, incorporeal undead, a spell that could grant a weapon the ghost touch property sounds reasonable to me. Make it comparable to greater magic weapon maybe?

No need to make a spell. Ectoplasmic Spell works just fine.. And it's at the cost of only 1 spell level higher.

That doesn't really help the fighter much though.

Since you seem to be more interested in effects that allow your martial allies to be useful than 'blast undead' spells, some thoughts;
1) A 'corporealize' spell effect that causes incorporeal undead in the area to become coporeal for 1 round / level could both deny them their typical avenue of escape, and make them vulnerable to crits (and mundane weapon damage) for the duration. A lower level version (3rd ish) would affect one incorporeal creature. A 5th level version might create a cone or burst effect that affects all in the area who blow their save.
2) From the other side of the coin, a 'mass ghost touch' spell that makes the natural weapons and manufactured weapon attacks of one ally per level (or one ally, plus 1 / 3 levels, or whatever) able to strike and deal critical hit damage on the incorporeal would be a different avenue to the same destination.
3) A 'deathbane' spell that buffs allies so that their attacks count as magical, and have a +1 to hit and +1d6 damage to undead, could also work, with it, at higher levels, increasing the buff to +2/+2d6 (like an actual bane weapon). Perhaps the spell is 4th level and jumps to +2/+2d6 at 12th level, and then to +3/+3d6 at 18th level, making the buff, eventually, even better than the bane weapon property.
4) A different route to that would be a spell that charges allies with a surge of positive energy. They can't use this to heal themselves, but it goes off whenever they touch or are touched by an undead creature, inflicting 1d8 positive energy +1 hp / caster level (+10 max). It only goes off once per round, so if you get five attacks, only the first hit gets the damage bonus, and if you get touched by five shadows, only the first one gets zapped, but it refreshes each round for the duration of the spell.
5) brain stopped here, good song on radio, sorry!
