Alright, I'm trying to make sure I understand all the nuances of Caster Level. Now, as I understand it, your caster level for a spell you're casting is equal to your levels in the class you're using to cast it. For instance, if you're a Cleric 2/Bard 4 and you want to cast Cure Light Wounds, you'll need to decide whether you're casting as a Bard or a Cleric and your caster level for that spell will be either 4 or 2, respectively, and will affect how much HP is healed.

Right?

But what about for prerequisites for feats? For instance, Arcane Armor Training requires caster level 3rd. I assume that since it doesn't specify arcane casting that a level 3 Cleric could take that feat, with the intent of gaining a level of Sorcerer later on and already having the feat.
But what I'm less sure on is if, for purposes of feat prerequisites, multiple classes stack for determining your total caster level. For instance, suppose I want a very versatile character and do the following:
First three levels are Bard, taking Arcane Armor Proficiency at level 3. Then, I take a level of Fighter, followed by a level of Sorcerer. At level 6, I start taking levels of Dragon Disciple and adding to my effective Sorcerer caster level. Once I take my fourth DD level, I've added 3 effective levels of Sorcerer for spellcasting purposes. So I'm a Bard 3/Fighter 1/Sorcerer 1/Dragon Disciple 4. My caster level for Bard spells is 3, and my caster level for Sorcerer spells is 4. Can I take the Arcane Armor Mastery feat, which requires caster level 7th?

Perfectly legal. Despite being called "ARCANE" armor training, the feat makes no mention of requiring the ability to cast ARCANE spells, merely that you have at least 3 caster levels.

No, caster levels do not stack in this fashion. Otherwise Mystic Theurges would have something like caster level 35 by the time they were done. :)
