Why is Survival not a class skill for them? I would think that most animals know how to survive quite well as they are always in the wild.

Possibly because on those animals that having Survival would make sense, they have the scent ability instead.

Also why would you take it with the animal companion doesn't the druid or ranger means this is not an issue as they may have a better modifier. Also wouldn't this mean the cavaliers mount could go hunting and provide food for the party? which makes less sense ...

Also survival is not a class skill for creatures of the animal type which animal companions are. The class skills for animal companinons are the same as the class skills for creatures of the animal type. Do you really want a +3 bonus on the wolves tracking the party hunting you?

I wouldn't mind because it makes sense. Predator type animals should have survival as the class skill
