1. The popularity of Gorum as a primary deity for some orc tribes in Belkzen seems to be made out as a relatively recent development in the places I've seen it mentioned. Would it be safe to say that around 4000-4100 AR, few to no tribes were shaped along the lines of the "worthy adversary" orcs that have been throwing down with their human Gorumite counterparts lately?
2. Have there been any facts released about Irgal Nirmath beyond what's in the Campaign Setting book? Nothing definite about his family, history, or significant others to worry about contradicting?
3. Would it be safe to say hobgoblin legions are counted among Molthrune's "monstrous armies"? Is there anything to suggest that they definitely don't serve among those forces?

They definitely do, in fact, according to the Inner Sea Primer, p. 13:
"Hobgoblins, centaurs, nagas, and lawful lycanthropes are all proud, valued Molthuni soldiers in their specialized units."

1) Rovagug is the primary deity of the orcs. Widespread adoption of Gorum into their faith is indeed relatively recent.
2) Nope, not much yet.
3) Yes, there were hobgoblins in Molthune's monster armies.
