I have a very simple question about this spell, do I gain all the attacks if i transform for example into a leopard (2 claws + bite) at my full attack bonus? I am a 1 fighter 5 transmuter 2 EK, and BAB +5, only 1 attack.

Correct, when polymorphing into a leopard with 2 claw and 1 bite attack, you gain those attacks. See Polymorph.
