Is there a way I can read the adventure path PDFs in text only? I love the art and look of the APs at home but there are certain times when I would like to be reading from the adventure paths but have to be warry of people looking over my shoulder. Does anyone know of a reader I could possibly use that would strip out all of the graphics?

The newer AP's can be converted using Foxit's PDF reader as it has a feature where you can view the PDF in text format. The older ones do not turn out so great as the two column format was not set correctly for PDF. I do this so I can read my APs on my KOBO reader. I wish they would support the APs in a epub format.

PDF2TXT did an excellent job! Foxit's reader doesn't look that good on AP 27. I'll hold onto it though for some of the newer APs seeing how PDF2TXT will expire on me in 30 days.
... you can pay for it now?
These are command line things I've compiled from source code on Linux and Mac.
See http://pdftohtml.sourceforge.net/
or
See http://www.foolabs.com/xpdf/home.html
You should be able to set yourself up with a nice, free tool to do this.

The ePub format is ideal for electronic books that are mostly text (like our Pathfinder Tales line), but it lacks support for precise layout of images and special textual formatting. Until something better comes along, PDF will remain the format of choice for our gaming products.

Once you have the text you can convert to ePub yourself with Calibre (or similar; Google text to ePub). As Vic says, no fancy text formatting, but good enough to read on the bus.

This is what I do now. I love how Calibre works and syncs with my eReader. Also, a great way to manage my books as well. A man can wish though?
