So, the PCs enter this demiplane where not only are inanimate objects kept from decaying over time due to the magic of the plane, but also living creatures are kept sustained with food, drink, or sleep. In the Necromancy/Gluttony wing, they come across body parts that have been separated from each other for years, yet they're still perfectly fresh. And yet... a bunch of bottles of wine are spoiled.
Is there... a particular reason? Wouldn't they be (at least) as fresh as the body parts?

In truth, wine spoils very quickly. Although my module is packed away, I'd wager that the wine was spoiled from bottling.
Heck, today you can even buy wine that's "corked," i.e. spoiled due to mold in the cork. Which is why more and more vinters are switching to either rubber corks or screw caps.
Given that such spoilage can exist with today's technology, I'd wager that it happens more often in a pseudo-medieval setting. Even one with magic.

Flavor, basically. It's kinda meant to be a creepy manifestation of the mix between gluttony and rotting things.

Wine could have spoiled in transit.... spoiled before it ever entered the dungeon.

Alright, I just realized James Jacobs clarified it in the sticky up above. It seems each wing more or less only preserves things according to their specialty- the necromancy wing would preserve dead bodies for longer than it would preserve wine, for example.
The undead corpses of yeasts inside the bottles! They spoiled it by digesting the sugars into acetic acid!
Yeasts are supposed to die from the alcohol content, you see. But what if they're reanimated after being dead?! Bwahahahaaa!
