1. There's Darkwood, so no, they're not ALL metallic, BUT upgrading cloth or leather doesn't really do much. You could make it up yourself, say quilted SILK armor, give it DR vs piercing weapons (a la the mongols in the first invasion of Japan), or an over vest few that material for light armors. Spider silk, from giant spiders, could be a cool material.
2. Yup, any shield can be made of a special material. Some it won't grant you any additional benefits, but you can do it.

Disappointing that there's not special "hide" materials--like Dragonhide except applicable leather/studded leather. Trollhide would be interesting.

Troll hide WOULD be cool, BUT then you run into the ethics of wearing a sentient creatures skin :) Rhino, elephant, dire beasts (with the bony knobby projections), these could all be used maybe?
Hey, dragons are sentient too and people have no problem wearing their skin!
But true, dire rhino hide would be awesome.
