are you using the conversion guide for 3.5 to pf?
Spoiler:
Yes, but I'm confused about areas such as ghostly npc's that have player class levels. For example, Lord Wilfred Godefroy, the Darklord of Mordent from Secrets of the Dread Realms is a male human rank four ghost with 12 levels of aristocrat. Since he was human, would you apply the additional +2 ability points, or would you simply treat him as a monster?
Furthermore, how would you treat Strahd, a male human ancient vampire with four levels of fighter and 16 levels of necromancer with a CR of 24? His abilities are Str 24, Dex 18, Con -, Int 20, Wis 17, Cha 18?
I guess what is really confusing me is how to treat NPC's that are also monsters (which makes up almost all of the Ravenloft monsters.) They say converting from 3.5 to PF is supposed to be easy, but for me, it seems anything but.

The CR's on much Ravenloft stuff was off the rockers to begin with. So you're not exactly looking at a well-designed 3.5 material conversion, hence the problems.
Me, I would line up the NPCs with average values in the monster creation table in the bestiary and work from there.
