Necromancy Spells - Do They Add Templates or Create Creatures?

Animate dead has the following wording:

"This spell turns corpses into undead skeletons or zombies that obey your spoken commands."

Does this mean that you apply the skeleton or zombie templates to the base creature that was killed, or does it mean that the spell merely creates the "skeleton" and "zombie" monsters as found in the Bestiary?

Sounds to me like, if you kill an ogre, a necromancer could make and Ogre Zombie.

Scarab Sages

Skeleton and Zombie are templates. Each one has a sample creature, based on a human. So, if animate dead is cast on a human corpse, then you get the sample monster. Otherwise, add the template to whatever the corpse was in life.
