Dust of dryness

Rules Questions

During our last gaming session, our rogue took out a water elemental with some dust of dryness.
What would happen if dust of dryness was used on a caster using the Elemental Body spell or a druid in wild shape as a water elemental if they failed their fortitude save?
If an outsider with the water subtype fails the save it is destroyed. Would the caster be forced back to its true form or take just the damage for a successful save? I'm just curious to know what people think.

I don't think your type actually changes when you use a polymorph effect, so therefore, the dust of dryness wouldn't have any affect on a character using elemental body or wild shaping into a water elemental.

I've seen nowhere in the rules that state your type changes (and trust me, I looked).

You'd just pop back to your old self, the water elemental form would be reverted. Granted, I'd give you a save per the rules.
