The entry contains a table for other species of spiders, which have different CRs, sizes, and HDs. Do all of the other stats remain the same. For example, should the Tiny scarlet spider have the same BAB, damage, and poison as the Giant Spider?

Nope. When you change a creature's size and Hit Dice, things like base attack bonuses and damage and such change as well, as detailed on pages 295 under "Adding Racial Hit Dice."
In Bestiary 2, and likely in more bestiaries to come in the years ahead, we'll be presenting actual statistics for lots of these other creatures—for spiders in particular, I believe we'll be statting up the giant black widow and the giant tarantula. They'll have some different abilities as well, so that they'll be more than just bigger sized spiders in the end.
For now, though, you can use the table for the different spider sizes as a guideline on building new stat blocks for larger or smaller vermin.

I will make the adjustments as you suggest, though I think I'll also make some alterations to the poison potency (no clear rules on how this would scale).
Poison should scale up according to the Primary Ability DC on table 1–1, depending on the creature's final CR. Since a poison's DC save is set by its HD and its Con, that part should more or less take care of itself as you rebuild the stats. But the amount of damage the poison does and how long it lasts and how many saves you need to make to cure it should be custom-designed—compare to other creatures with similar CRs who have poison to get an idea of where to ballpark this rule element at.
