As for what is considered core, I believe Paizo has said that they consider the Pathfinder Roleplaying Game Core Rulebook and Pathfinder RPG Bestiary the "core" books. All other books are considered optional, though it is worthwhile to note, that beyond the Advanced Player's Guide coming out this August and the Gamemastery Guide there are no plans for similar general splatbooks.

So, I've noticed people mention uncertainty regarding this, so I'll bite. Is the Pathfinder Chronicles Campaign Setting considered a Core book, and as such, is it available as a resource for things like Pathfinder Society and other forms of legal play?
If you want to use the Pathfinder RPG with your own setting, you just need the Core Rulebook and the Bestiary.
If you'd like to play in our campaign setting, the Pathfinder Chronicles Campaign Setting book is highly recommended.

The Pathfinder Chronicles Campaign Setting book is much like the Forgotten Realms Campaign Setting book for 3e. It's a book specific for playing in that world. Yes it has feats and other crunchy bits, but the DM might not allow it because it's a setting book.
If you need to define "Core" then the best way to define "Core" is what's listed in the Pathfinder Roleplaying Game section of the store.
