Where do I find stats for the animals listed as familiar options for the witch?

I would suggest the bestiary.
But the goat, pig and fox aren't in there.
Check the advanced players guide playtesting area perhaps...?

You can always use the good old Monster Manual?
Alternatively, use the stats for similar animal. May be the dog from the linked page could be used for a fox?
Remember, a lot of animals are streamlined and not every species of canine would demand a new set of stats. With a bit of research you could easily modify the stat blocks anyway.
Just a thought.

If you check p.18 of the preview document, just under the familiar advancement table, it mentions that the stats for familiars not in the Bestiary will be in the Bestiary II. In the meantime, if the stats are that important, you can make something up based on other familiars and animals that are out there.
