Ok, I'm addicted. I wasn't going to purchase all the smaller books, but the ones I purchased based on the title have all been excellent.
I'm left wondering where to go from here.
I currently own:
Pathfinder Core Rulebook
Pathfinder Chronicles Campaign Setting
Cheliax, Empire of Devils
Taldor, Echoes of Glory
Classic Monsters Revisited
Gods and Magic
Into the Darklands
Dragons Revisited
I have preordered the Bestiary.
What other Golarion-themed books are must-haves? I admit I'm mostly interested in flavor (the game has plenty of rules as it is) and in southern Avistan.

Have you thought about picking up any of the third party publishers? There are a lot of publishers out there supporting PFRPG and you might want to try them out. Of couse I would suggest Louis Porter Jr. Design, first but there are a lot of good products out there fo you to take a look at.

Dungeon Denizens Revisited fits with two of the other books you liked.
The 'Guide to ...' books are also very fluffy (currently guide to Korvosa, and Guide to Absalom). They focus on the area in and surrounding one city in each book, the same way 'into the darklands' does for the underground elements of the world. Guide to Darkmoon Vale is the same thing for the area of the vales and the 2-3 settlements in it. (Of these, Darkmoon Vale is prolly the one I would recommend the least, I believe it was in development as Mike McArtor was leaving for another job so there are a few more small glitches than in the other two)
If you're interested in the Egyptian analog at all. the Osirion book is good, the Quardian book is the same way for Arabian nights style setting... both are split up the same way as the Taldor and Cheliax books you already own.

Must-haves? All of 'em ::laughing:: I find new information in every book I get that adds to my enjoyment of the world. However, here are the ones that I'd get first.
From the Companions: Osirion, Land of Pharoahs; Qadira, Gateway to the East. Those will complete your "faction" books for Pathfinder Society, as well as give you the rest of the big cultures around the world currently.
I also recommend Elves of Golarion, but its fluff is more specific than the other books, and can wait until you need their kingdom and more elven info. Same goes for the Legacy of Fire Companion and Second Darkness Companion. Lots of good info in those, but geared for those APs.
From the Chronicles (in no particular order): Dungeon Denizens Revisited (to round out your revisited set); Gazetteer (is not just a repeat of the Campaign book, and is very handy for handing to players to give them a good overview of Golarion); The Great Beyond (adds to the Gods and Magic and is the outer planes, very nice).
After that I'd start getting the rest of the Guides to books, as they give you a lot of information about specific areas: Darkmoon Vale, Korvosa, Absalom, and Katapesh are all currently out.
Beyond that, keep your eyes open for good deals on the old APs, as the back half of each is chock-a-block full of articles about the world, the people, things, new beasties, and great fiction :)
