I'd imagine each member of those races gets to pick their favored class, just as the core races do.

Exactly. I ASSUME that from now on PCs get to pick a favored class. And NPCs probably do the same. I am sure that will be clarified in the actual Bestiary.

Until then, that is what I am going on.

Same reason Halflings, Dwarves, Elves, and Gnomes don't have Favored Classes:

Favored Class is no longer a RACIAL feature (beyond that Half Elves can choose TWO Favored Classes)

Ummm no. In the core book every race have two classes that they get to pick from as a favored class. For example, elves must pick between ranger or wizard at first level and can never change it. Humans and half elves get to pick any class. In the preveiw favored class is not mentioned.

P-31 Favored Classes

Each character begins play with a single favored class of his choosing

Are you going off of the beta rules or the full rulebook?

In my copy of PFRPG the races have no favored classes.

Likewise, the Pathfinder SRD, lists no racial classes. Have a look:
Pathfinder SRD - Races

EDIT: Ninja'd by the dragon.

Bugger! They really change it quite a bit didnt they(walks back to his corner and begins to read).
I do like what they did with the assassain class, taking away spells. I always wonder why an assassian would have spell casting ability.

It's like having three sets of rules in my head. 3.5, Beta and now this.
