What's the story behind knighthoods in Varisia? Sandpoint has Sir Jasper, and King Eodred II assigned Sir Tolgrith to re-open Bloodsworn Vale. Who is knighting these people?
Well, I'd imagine King Eodred knighted Tolgrith . . . ;)
I'd imagine that an organized, structured church like Abadar's probably does have knighthoods for their paladins and sanctified holy warriors. I'd probably be more perplexed to see a paladin of Erastil with the title of "Sir" for example.

It may just be flavor.
I haven't seen anything in Varisia that strikes me as traditional feudalism. I'm not actually sure how the three city-states exert or project power to the rest of their holdings.

I imagine it's the old chestnut; "Pay taxes to us and we will maintain a road to our city and promise to defend you from marauding armies. Refuse to pay and we will be the marauding army."

It's mostly flavor. Korvosa's monarchy is only 1/3 of the city government, and to a certain extent the "King and Queen" are merely figureheads who don't have near the power of a typical monarchy. Still, they do have the power to knight folks as they see fit. That said, there's not really a classical knighthood operating in Varisia. References to knights in early products like "Bloodsworn Vale" are artifacts from a time when not everyone at Paizo really understood how Varisia worked, I'm afraid. If we were to print "Bloodsworn Vale" today, it would likely omit references to knights and change it to something else more in line with the way Varisia (and Korvosa in particular) actually functions.
Certainly, "Sir Jasper" in Sandpoint's mostly just an affectation, like "Mr." or "Boss."
EDIT: There IS a knightood active in Varisia, actually; the Hellknights. But that's a whole different can of worms. :P
