ebay prices won't go bananas. D&D and AD&D stuff sells from $1.99 - $10 a book.
Anyway, I suspect you won't see them from Paizo. They're all out of print now and just won't be reordered.

True, but most of the sellers have somewhat dodgy overseas shipping prices, and one thing I love Paizo for is their reasonable international shipping rate (best I ever had in any US shop), and besides I would rather leave my money here (taking advantage of rather silly exchange rate between USD and EUR :P)

Nope. In fact, you can expect to see their paizo.com listings going away soon. Wizards is rapidly running out of 3.5 products, and we've been informed that the channel is expected to completely dry up by October or November.

I see that a lot of 3.5 books have the "currently unavailable" tag. Are they ever coming back, or is all the old stuff OOP, meaning that we should hit emergency purchasing mode before the stores run out and eBay prices go bananas ?
You might consider looking at Amazon's individual sellers. The shipping price is a bit more consistent than Ebay (there's a set price for shipping both domestic and international). You'll usually have quite a bit to choose from, and many might still be available from Amazon itself (meaning you won't have to buy from a private seller). This can be trickier if you're overseas, but it might be worth a look.

Is it possible that you could do the same thing with the books that you do with the minies. Offering to give people store credit in exchange for used books to re-stock your shelves with?
We've thought about that, but shipping costs would make that one prohibitive (that is, it would often cost you more to ship books to us than we would be willing to give you for them, in most cases). Also, people are more sensitive about the condition of used books, so it would be a challenge to deal with those issues.
