There's a few monsters in the SRD that I would qualify as having glass jaws, yeah. For the most part, though, the SRD monsters are pretty well balanced overall. There are a few standouts, though, such as:
Beholder: Sure, he's got all sorts of eye rays, but if you can just get in there and start hitting him hard, his hit points don't let him hold up. An entire 13th level party getting initiative on a beholder has a VERY good chance of cutting him down before he gets to go.
Ogre Mage: This guy is, honestly, the classic example of the glass jaw syndrome. At CR 8, he's got the hit points of a CR 4 creature and the AC of CR 5. Average damage per round and attack roll is about on par with a CR 5 as well. His SR helps a little, as does his regeneration, but his only real CR 8 worthy aspect is probably his cone of cold, but he only gets that once per day.
Those are the two that immediately come to mind.

And that's where the rakshasa falls down. A few power attacks later, his hit points simply aren't gonna hold up.
Of course, it's also strangely easy to kill them with alchemist fire or flasks of acid, since they have NO protection against that.
