My specific situation is thus: In our campaign we can never really find a safe place to sit and craft (we're part of a "rebel" group and the "evil empire" is pursuing us), so it's near-impossible to use our Magic Item Creation feats to enhance existing gear or create new gear. Income is also abysmal, and any time we go to sell items we risk getting caught. So most of our gear hasn't changed in several levels (APL 11)...ouch, right?.
Enter Planes. My thought is very simple... We plane shift the crafters in the group (who all have Rings of Sustenance) to the Astral Plane, which is Timeless. Spend a few weeks crafting, then Plane Shift back. If I understand the Timeless plane, no time should have really passed on the Material Plane.
Is there any reason why this plan will not work?

Timeless : On planes with this trait, time still passes, but the effects of time are diminished. How the timeless trait affects certain activities or conditions such as hunger, thirst, aging, the effects of poison, and healing varies from plane to plane. The danger of a timeless plane is that once an individual leaves such a plane for one where time flows normally, conditions such as hunger and aging occur retroactively. If a plane is timeless with respect to magic, any spell cast with a noninstantaneous duration is permanent until dispelled.
Note the bold. You'll need the 9th level spell to create your own demiplane then cast time stop on the casters to pull this trick off the way you describe.

But the Astral Plane doesn't effect age. So if you are not aging on the Astral Plane, that implies to me that time isn't really moving there, which is why it "catches up" with you when you return to the Material Plane.
Timeless: Age, hunger, thirst, afflictions (such as diseases, curses, and poisons), and natural healing don't function in the Astral Plane, though they resume functioning when the traveler leaves the Astral Plane.
Time may continue to function on the Astral Plane in its own way, but when compared against the Material Plane it doesn't seem to be moving.
Am I completely wrong in that interpretation?

Sadly, Yes. Time flows identically in both planes (material and Astral). It's just the effects of time don''t effect you in the astral. Syncronized watches taken to both planes will show the same time when you put them back together.
I've looked for this loophole for years. The astral plane isn't a timestop effect. sorry.

So then I would need an Erratic Time plane where 1 day on the plane = 1 round on the Material Plane to accomplish this?
EDIT: OR a Flowing Time plane with a nice ratio, I guess...And on a side-note... Time flowing won't stop me from being able to perform the Plane Shift and craft, I'll just disappear from the Material plane for however long I'm in the Astral Plane. So I can still use this, but I'll probably want to protect myself against Scrying to prevent enemies from finding me whilst crafting...

Flowing time with the right ratio would get the job done. Erattic time is trickier. When you return to the prime it could be as if no time has passed or as if thousands of years have passed.
The astral plane is useful in that spells cast on the astral are essentially permanent. Have an anti-scry spell prepared and cast it first thing when you get there and you're golden (assuming it holds). Finding you the old fashion way would be Nigh impossible as the astral plane is infinitely large.
I'd also have one of the hut spells ready so you'll have somewhere to work. The ring of sustenance will be really helpfpul for when you return. WIll save you from having to eat months worth of food in one sitting.

Perfect, I was just thinking this. Plus, if the anti-scry spell somehow failed, I would still get at least a +10 to my Will save versus the scry attempt...
What is the exact name of the anti-scrying spell to use?
I'm sure that Obscure Object won't do the trick... since I'm not an object... (unless using that on the hut and being inside the hut counts)
Nondetection would add a CL check.
Mage's Private Sanctum seems to be the only surefire way to prevent scrying altogether.

Private sanctum is your best bet until you get access to Mindblank.
Now that I'm thinking about it if you could get your hands on a way to cast time stop it would infinitely helpful as spells cast on the etheral are essentially permanent. Even if it was a 1/month item it would get the job done.
Planeshift>>>Timestop>>>Tiny Hut>>>Private sanctum>>>Craft as long as you want>>>Planeshift back and only one round will have passed.
