I bought a bulk load of PFS maps earlier this year. Among them was a complete set of maps for Emerald Spire. So, I was thinking of running that for my PFS group locally. However, they are all comfortable with PFS 2e, now, and won't want to learn 1st Ed. (I, on the other hand, have extensive experience running 1st Ed.)
Would it possible for me to adjust the adventure so that it fits into 2e? Am I allowed to? Has anyone already done a conversion for it that I could use?

I don't know why you wouldn't be "allowed to", but in general here is my experience of converting 1e adventures to 2e:
Its usually fine to use same compositions. (like, 8 weak enemies work better in 2e encounter than in 1e tbh, same with solobosses), but 1e enemies might be much lower than party level by more than 4, so in those cases its matter of "Is this meant to be any kind of threat or more of rolepalying moment" or deciding whether to adapt enemies into higher level than original trivial enemies or buff them further.
Also 2e encounter creating guidelines are really helpful there in adapting 1e encounters, so just figure out how many encounters of each level you would need on each floor for pcs to level up on time and use opportunities for quest exp for rest of them.
(just to give examples, if there is in 1e 10 CR 1 creatures for level 10 party for what is clearly meant to be combat encounter, its valid to adapt them as level 6 trivial enemies worth 10 exp each. But that total of 100 exp would put it between moderate (80 exp) or severe (120 xp encounter) so you could add something worth 20 xp to encounter(monster, hazard(s), etc), reduce amount of enemies by 2 or add 2 more. Alternatively if you don't like running such high amount of enemies in encounters, just reduce their numbers and add more levels)

I have run all of Rise of the Runelords, as well as some D&D 3.5 and 4E stuff in PF2.
A lot of the time monsters are the same basic level/difficulty, so just use the PF2 versions, I tend to cut money by 90 percent, and magic items often need some work, but it's not overly hard.
It takes some practice, but it is very doable.
