Since I still found the new version too crowded, I thought about what I could do and tried something on my own. In fact, it could have been a much simpler and cleaner design. I hope Paizo releases more new player friendly version of the character sheet and I wanted to share my opinions.
Looks like this will be my only chance to get new players to play tabletop PF2e with me without scaring them off as soon as I show them the sheet. :D
I put the shield under the weapons section because they are more relatable and I thought there shouldn't be anything up there that not every character uses. I placed things that are not used much in the bottom right.
I put HP and Armor AC side by side. I minimized unnecessarily large boxes or deleted them because I found them unnecessary.
I deleted the thick lines or titles that created unnecessary crowds, and instead of indicating them with shapes, I indicated HP and Armor with colored boxes.
I also put the level + proficiency reminder in the top right corner because you need to see that first to apply it to all other proficiency boxes. The reminder should be the first thing you see when you level up.
In addition, you can now use new empty spaces as you wish, instead of limited-use defined boxes. (MAP or skill notes etc.)

With MAP attacks and small improvements. More space for you to add your own notes and strikes, items etc.
