Can you take the Expanded Skill Channeling Epiphany twice, gaining different skills each time?

That's how I've been operating, but just to be sure, I cracked open my (digital) book and found this text that is absent from the SRD:
Following the new classes are plenty of new options for the existing character classes introduced in the Core Rulebook. Every class from envoy to technomancer receives alternate class features—new abilities specific to that class that can be selected in place of certain standard abilities the class grants.
I'm not sure if "in place of certain standard abilities" changes the narrative. I don't think it does.
So I think you're safe turning your Mystic into a skill monkey.
