Since Gorum lives in Elysium despite being CN (and his clerics able to be CE) what happens to his petitioners who aren't CG? Do they become shapeless or larva instead of chosen? Or just become CN or CE chosen? Also, his realm is described as full of combat (which makes sense) but if it is, how come all his petitioners aren't dead by now? I was thinking maybe it works like Ysgard in DND (if you die, you just automatically come back to life 24 hours later.)

They become CN petitioners who live with him on Elysium. And not all combat is to the death.

So their alignment changes then?
As a general rule, if a worshiper of a deity is devout enough to earn a place in that deity's realm, yes, they become that deity's alignment. This isn't a "change" though, since the original creature is a different thing than the petitioner it becomes. The exceptions, which are very rare, occur when a soul retains its memories, and in those cases they move on directly to become an outsider with whatever alignment was appropriate.
