I was wonder how specific i had to be with animals. Especially in pfs.
If i wanted birds, would i have to choose specific types of birds or would i get (idk if these are in pathfinder) penguins, ostriches, etc?
Also, where would I go for pfs allowed animals the rule book, bestiary?

I play an Animal Speaker who is affiliated with Snakes, and have only encountered table variation when it comes to "Supernatural versions" of snakes. One GM ruled that an Amphisbaena wouldn't attack me, while another GM concluded a Hydra wasn't sufficiently "snakelike" for my ability to work.
You should be safe with anything of the Animal type that is a bird in real life. Hawks, owls and even penguins should definitely be safe.
But you might encounter occasional table variation on the more fantastic birds, such as a Roc or Avian Megafauna, even though they are of the Animal type.
I recommend bringing up your ability to your GM before game. It's always interesting to see the different reactions when I tell my GMs that "oh, yeah, and snakes never attack me".
