I am starting to put together my next campaign, since my health is being fairly stable.
The rules skeleton will likely be pathfinder since the Scion players are likely to have life entanglements to prevent regular play.
I am looking at the Consolidated skill option from Pathfinder unchained. I have noticed that the Religion skill has nothing added from the old Knowledge Religion. I am thinking of adding a Ritual component to the skill. Has anyone else thought on this?

The consolidated skills system seemed woefully unfinished when I read it last... though I did like the concept of Athletics, mainly because it returned jumping to being a strength based check.
Looking over them again, Religion seems to include all of the example checks from the CRB for Knowledge (Religion) and (Planes), so I'm not sure what it supposed to be missing.
However, for ease of conversion: During an Occult Ritual, I assume you would use Religion in place of any check which normally required either Knowledge (Religion) or Knowledge (Planes).

I always thought there could be a Prayercraft or Ritual skill, like the divine parallel of Spellcraft. If you're going with a general Religion skill, you could include that prayer/ritual element as well.

Divine Relics, Old Cults, Forgotten Gods... that kind of thing tends to be really common in the standard PF game. That's in addition to identifying undead, which tends to be overused by GMs.
With the consolidated skills, you get Knowledge(planes) which includes identifiyng every ****ing outsider.Unless you play unusual games (social-focused, investigation), there's only a few other knowledge who can compete with that (arcana being a good candidate).

Dealing with religions, undead creatures, and cults to evil or obscure gods are pretty standard in most adventures. Undead are common enemies in dungeon crawls, and are the type of enemy where not knowing their capabilities can easily get your character killed. In a social adventure, not knowing about a religion can cause you to commit a major faux pas.
