How do the rules for an ecclesitheurge's bonded holy symbol work in PFS where crafting is not allowed? The other classes who have a class feature that allows crafting get something else instead, but I can't find anything on this.

Limited crafting is allowed for bonded items. Basically you can upgrade a bonded item as if you had the appropriate feats. But you're still limited to upgrading it as a holy symbol or neck slot item.
