Is there a map we can print out to go with our table assignments for GenCon?
(I'm running 8 sessions don't know how much time I'll have to scout where each table is ahead of having to find it to set up...)
Also I haven't been to GenCon in Indy - are there food options near where PFS is played? A bit worried about only having 15 mins to grab lunch between the first and second slots on Thurs & Fri.

I can't answer all of these, as I have never been part of HQ, but there is a "food court" option not too far from the Sagamore ballroom. But it will probably be crowded enough that the 15 minutes won't be enough. I recommend bringing snacks or food with you to eat, and go for the other food when you have around 30 minutes or longer.
EDIT: Forgot about the food trucks. There are food trucks outside nearby Sagamore, but same deal.
The HQ should be very helpful in getting you to your table with some time to set up. It helps if you arrive early, as well (aka, don't show up at the start time of the event, 15-30 minutes early, at least, would be helpful, with more time being very, very nice for the specials), but what happens happens.
As a player, I am fine with waiting a few minutes if needed for you to get set up. After all, you are donating your time at "The Best 4 Days in Gaming" to run an event for me. Besides, it'll probably take that long to get through character selection and character introductions if we choose to do them.

There are table numbers within color-coded sections.
Your table assignments are a color-number pair. Pretty easy to navigate, even if you end up on 3 tables in a day (Thursday). Good days you're all on one table for all your slots (Friday!)
GMs have different expectations, Zauron - as has been communicated in the volunteer messaging this weekend.

I know of no real map to finding tables, but it's fairly straight forward. You have the color code to tell you what color of table cloth is on your table and then there's only about 20~30 tables of each color (and they're all together).
There is a food cart/vendor right outside the Sagamore by the escalator's towards the middle of the convention center. You'll pass by it coming in from the hotel in the morning. It's overpriced and greasy, but it's enough to generally get you through that hard push between morning and afternoon slots.
Plan on being at the tables at least 15 minutes ahead of slot time, 30 if you can. If your first slot runs long, it might be a push but HQ has tried to keep you at the same table for the day I think, so that should help minimize tear down before the next slot.
See you there!

Best advice I can come up with is try and make sure that your morning slot runs in 4 hours, to give you time to go get some food. Or if you know of any friends also at the Con, rope them into getting you something.
If you try to go to the food trucks actually around lunch time (11-12:30) you will probably wait in line for about an hour. The Food Court in the Circle Center Mall is generally much faster, though it is a short walk (not far though). I usually just plan on bringing trail mix, granola bars, fruit, etc. to get through the day. You could get a refillable water bottle and powdered mix stuff of some sort. Easy to get a player to run to the water fountain and refill your water bottle for you.
If you're doing 8 sessions...definitely recommend LOTS of water (like 3x what you would normally drink) and cough drops. Those 2 things will be essential to actually having a voice still at the end of the weekend. ;)

While there is no map, it's not that hard to navigate because the table cloths have different colors, making them easy to tell apart. From that point it just finding out where the specific number is, which they usually go in a logical order.
I usually buy dry lunches ahead of time from CVS and bring them with me to eat between the slots. Otherwise I would never have time to eat and catch my breath properly. That plus the water that gets handed out is usually enough to sustain me.

I'm running a lot of scenarios back to back most days (8 slots) so expecting most of my GenCon will be in the ballroom... thankfully most of the time t'll be running on the same table (switching for one of the specials I'm running).
If they get here in time I'll have a lot of flip mats - but getting a bit worried that they might not all arrive in time... going to have to try to print out a lot maps today as backups
