I can't be 100% sure but I don't believe an official name was given in Guide to Korvosa. I remember plugging in an elderly former-burglar simply named Father Sellen as the high priest for Crimson Throne. He had old boltholes from his early days kept in decent condition for use by his clergy and those possibly seeking sanctuary with them.

I'm pretty sure the only priest of Sarenrae in Korvosa that is named at all is Valdur Bromathan IV. I have been thinking of just using him as the high priest for my own CotCT campaign, but with a slight bump (since he is only a minor priest with just two cleric levels). I really like Mikaze's idea of a redeemed criminal, so I might build something off that instead.

There is indeed no mention of the high priest's name in Guide to Korvosa. I only have a printed copy of Crimson Throne, which I can't search easily, and was hoping that there'd be something in there.
Mikaze: I love the idea that the high priest of Sarenrae would be a reformed villain! That really plays into the Dawnflower's philosophy of redemption. I am totally stealing that idea!
Last session, one of my PCs unexpectedly requested an audience with the high priest of Sarenrae, so I had to wing it. I didn't name him, but described him as a human, possibly of Varisian descent, with a short-cropped salt-and-pepper beard. He had a kindly face that you imagine would turn stern as steel if angered. A bejeweled, faintly-glowing scimitar of Qadiran design hung on the wall behind his desk.
