When a loot reward says something to the effect of "a crown worth 40GP" or "a holy symbol worth 100GP", is that the amount the PCs will sell it for or how much it is worth total? Since most of the items flagged this way don't have any alternative uses, I want to make sure I am not giving the PCs twice (or half) as much gold as I ought to. Thanks!

My houserule is that a "100gp" gem/jewelry/art object sells at the marked price: That's what the PCs can sell it for.
If PCs want to buy gems/jewelry/art objects, say to consolidate their loot to make it easier to transport, there is a 20% markup. So to buy a "100gp" gem costs 120 gp. That markup can be reduced by successful social skill checks (Bluff, Diplomacy, or Intimidate), or Profession (merchant) skill checks.

I have to admit that the appraise check for loot value has to me become tediuos and not something I tend to add to my games.
When it comes to breaking down types of gems, differant pieces of jewerly or artwok I tend to convert all the value to coin to simplfy and speed up that area of game. I do at times stick in spell compentns in loot piles or important story objects but normally that isn't supposed to be sold.
