So if I understand it correct:
Your first game you can have a character, your second, third and forth games you can have a different character each time. But your fifth time playing you have to play the same character you played the forth time. And from then on you can ONLY play that one character until it dies.
Is that about right?

That's mostly correct. Any time before you play your character at second level, you can change anything about it. And it typically takes 3 scenarios to gain a level (more if you're doing slow track, or fewer if you're playing a sanctioned module). After that, you're locked in and can't change anything.
However you can always make a new level 1 character starting at 0 XP. And most experienced players will strongly recommend that you keep multiple characters at different levels, so you always have something appropriate for any tier.

You can have as many characters as you want. But if you want them to level up, you need to play the same character multiple times.
It shouldn’t be an issue for you to get multiple characters leveled up, as we have over 120 scenarios, modules, & sanctioned APs to play.
Ultimately I think what you are referring to is 1st level rebuild rules.
Essentially you get 1 XP per scenario played (or 3 per sanctioned module—except for the shorter Free RPG Day modules). 3 XP gets you a level.
At anytime before you play for your 4th XP with the same character, you can rebuild the character. The Guide to Organized Play will define for you all the particulars on how you can do that.
You can do this with each and every character before you play for your 4th XP.

Until you become 2nd level, you can adjust your character. You got that part right.
Not sure about only play that one character until they die part, and where you were going with it. Once you become second level, you can't change that character's race, stats, skills, feats etc..
But you can have more than one character at one time (I currently have 10) and play the one that feels appropriate for that scenario (and is of the right level for the scenario).
