So I've been convinced to run our next campaign as Carrion Crown over VTT. One of the questions I've been asked is if there's time for crafting in this AP? Since I still haven't gotten very far in reading, I figured I'd find out from others who have run it so I can at least answer that question while the party is being worked out. Thank you in advance for responses.

I told my PCs that time in this early books was limited, and I'd add time only if they needed it.
Between books 1 and 2, there isn't a significant gap, but you can days as a GM, if you feel it will help the party.
The second book takes place over the course of a few nights strung back to back. There is very little time to craft anything during the trial. After the trial itself, there isn't any real downtime as the PCs head into a dungeon crawl.
Between books 2 and 3, there's no mention of time. You can give the PCs a few days by "letting the trail go cold" and have Judge Daramid be the NPC to point the PCs towards Ascanor Lodge.
I haven't gone over the time schedule for books 3-6, but my best guess is that after book 3, the PCs might cool down a little on this Vendetta for avenging the dear professor.

Inkwell is pretty on top of books 1 and 2.
Book 3 to 4 is a long cross country trip but you're chasing someone, so there isn't a whole lot of spare time beyond the week or two of travel. Book 4 is a lot of hops between near-by locations with no real time between since the party should be chasing someone down.
Book 5 is in the capital a few days travel from where 4 happens. I've not read through it, but you're doing more investigation and so probably won't have much time. Furthermore, the stuff the players want to craft at this point is all going to take quite a lot of time to manage.
Book 6 is, from my understanding, a huge deadly dungeon crawl.
I have a crafting wizard among my players. I let him take a few feats to get be able to do crafting on the road. He's managed to keep the players in cloaks of resistances, a few stat boosting items, and a pair of boots or two. But he's also not making his own wands or scrolls, is an elf, and has a ring of sustenance so he only needs 2 hours of sleep. He doesn't craft as often as he likes and he's got a hell of a spreadsheet to track what he's doing and when.
I also altered the rules on crafting so that he can finish an item and then start on the next item in the same day. He can't complete more than one thing a day, but he can finish it and 'seal' it the next day.
We're ending book 4 and I doubt he'll have much left to craft coming up here. The party already has all the normal stuff and the time required for crafting anything they actually would need is going up ever faster.
