My players have asked before, and as I wanted to get some props going (specially the charter they signed to protect the city) I'm wondering: Does Sandpoint have a special symbol, badge or coat-of-arms?
Maybe they use Magnimar's, since they are a part of that city bureaucracy? Maybe they have their own symbol, perhaps merging the four founding families'?

I imagined them as people in light chain mails with red tabards and swiss like helmets usually walking with a sword or halberd/spear.
Classic medieval militia like.
You could set some symbol of local animal for them. Empires usually picked animal like symbols like that. Maybe a bird, small tiger like creature or such.
Just a few ideas.

I do not think there's ever going to be an official word on that, so suggestions like yours are exactly what I'd like.
I've envisioned the city watch a little less army-like (though it makes perfect sense), focusing more on simple crimes and whatnot. Thus I've described them walking around with studded leather armor, saps, and some kind of extra weapon (personal choice of axe, sword, mace, etc). They also use a tabard, but what is depicted on them is what I'm trying to get to.

Makes sense. They aren't exactly warlike equiped so saps are most likely common.
About symbol, hm, lets see:
Common animals in Varisia or near Sandpoint are most common ones, dogs, horses, cougars(remember that goblin druid, this might be good animal pick), regular birds, no large predators besides wolfs.
4 noble families include Deverins(farmers and builders), Kaijistus(glassmakers), Scarnettis(loggers) and Valdermars(shipbuilders).
They are all pretty different and picking unique symbol that connects them all might be hard.
Symbols that I can think of: A fist, Shaking Hands, A sword and some tool crossed over with each other, Torch(Light of the lost coast?), A Flame.
Cant really figure out anything else.
