I have never run an Adventure Path as a GM. In fact, I'm pretty new to Pathfinder and have GM'd a few modules for my kids at this point. However, I have looked at some Adventure Paths at my local store and cannot tell if the monsters included in each are the only ones the adventurers will encounter. Are these simply included to be used in addition to 'normal' bestiary monsters I would throw into the mix or are they essentially the only monsters that need to be included in the adventure?
no, each AP will use some monsters from the various Bestiaries and the AP itself.

Each AP is pre-built. All the monsters you need in the adventure are included (although you'll need access to the three bestiaries themselves for standard monsters whose stat blocks are unmodified).
That said, going in and making a pre-built adventure your own by adding additional monsters, NPCs, traps, plots, treasures, and secrets—essentially customizing it to your play style and campaign needs—can be REALLY fun!
