Ranger Animal Companions

Can a ranger get an elk or thylacine animal companion? Could a paladin get an elk mount at level 7? (If he worships Erastil) What other mounts would be appropriate for a paladin in Kingmaker?

I know there's rocs later, a ranger could get one of those if you don't mind the ranger flying when it gets large. Elks and mammoths both exist.

I thought rangers could only choose the dire rat from the Bestiary. They are pretty limited when it comes to animal companions.

Well, by the rules, they only get the list in the CRB. I assumed your DM (or you, if you're the DM) was opening rangers up to the whole druid list, assuming the animal made sense for the region. If not, rangers are limited to: badger, bird, cat (small), dire rat, dog, horse, pony, snake (viper or constrictor), or snake. No elk or thylacine.

As for a Paladin mount: GMs call. Sounds more flavour then crunch to me so I'd run with it.
