Since UC is out, I am not sure you can use the play-test version anymore, typically once the offical version is out the play-test versions are obsolete.

So I have found the play test document for the gunslinger class. I have not however found anything about how the gunslinger should work in PFS. What's allowed, what's not allowed, all that good stuff. Am I missing a document somewhere? If so please be so kind as to provide a link.
Techinically the play test version is the legal version for PFS. The Ultimate Combat book has not hit the street release date (8/4) and when it does the Additional Resources page will be updated to reflect that. Additional Resources is the document you are looking for.
Details on what is allowed from the gunslinger playtest are on the Additional Resources page, which you get to by clicking on the Pathfinder Society logo in the upper left and then clicking on the Additional Resources link. However, as others have said, what is and isn't allowed for the gunslinger will be changing once Ultimate Combat becomes legal for PFS play on Aug. 4th. So if you make a gunslinger now, be prepared to possibly redo a big chunk of the character.

The new Guide is out now, and UC comes out tomorrow morning.
According to the Guide, after tomorrow morning, 8/4/2011, you must adjust your Gunslinger to the finished rules. There is plenty of material in the Guide for the Gunslinger to tell you what is legal, what is not, and what has been adjusted.
