Hmm, Maby a large stone giant. Perhaps the best rout might be to look at what is already in the Bestiaries, perhaps the Monster Manuels, and try "re skinning" and existing monster.
When i'm looking for a new monster, sometimes all i need to do is change how an old one looks.
it looks. the nice thing about this is that the players don't necessarily know what they are
dealing with. one time i took an oger mage, and "reskinned " it so it looked dragon like with
wings. I changed the Oger mage's cone of cold to a "cone of fire" that the "dragon like oger'
breathed on the party. it was something "new" and kept the players on their toes. I hope this helps

Id start with a construct template and go from there. Maybe a reduced stat terrasque?

I think they are more of an "outsider" type. They and the Ranyhyn share the ability to cross vast distances in an instant.
A creature from the Elemental Plane of Earth sounds more appropriate for a Sandgorgon. They would be a fairly high CR creature too. Little stood before them, other than Covenant's wild magic. Nom consumed one of the Ravers. That would require a creature of considerable power.

Perhaps some sort of elder earth elemental might do the trick.
I know adapting monsters from other literature sources is great and allot of fun. I used to do this in geometry class but that is another story.
I often find it difficult to bottle the awesomeness of a particular monster from a novel and unleash it in a Pathfinder game; I keep tripping over the 1s i roll on a d20. Authors never have to worry about 1s. Whatever they write happens in their story. But I digress. I have over the years, now perhaps this is just my own experience, but the larger monster, the more "devastating" it is, the more susceptible it is to those wretched 1s. I cant count the number of times beholders, behirs dragons and neo lithids, have died because of the GM rolling a wretched one.
The latest was a Neolithid I thought I would frighten the party with suffered an ignoble fate. The paty wizard cast a flesh to stone spell on the creature. I rolled a 1. Instant lawn art. Impressive lawn art, but lawn art none the less.
I apologize for my rant. Perhaps Nom may work better as a plot device. That will realy keep the party guessing.
Good luck statting the sandgorgon who shall not be mentioned.
